Sustainable fishing of sturgeon has made Caviar easily available

Caviar is a delicacy. Only the eggs from sturgeon can be called caviar. However the supply of sturgeon dwindled as the demand for the fish increased. Over the year sustainable fishing was introduced. This increased the supply of the fish. With this Caviar can now be enjoyed are reasonable prices. There are about 24 species of sturgeon all of which are in the endangered list.
